Ingredients -
2 c finely shredded cheddar cheese (I use mild cheddar)
1 c mayo
1 T diced pimentos plus add a little juice
black pepper to taste
Directions -
- Dump all ingredients into a medium bowl and stir until mixed well.
- I like to let it set in the frig. overnight....the flavor is better that way.
- It's great served on crackers or as a sandwich.
This recipe makes 2 c pimento cheese spread.
That will cover 32 crackers if you use 1 tablespoon pimento cheese spread.
