Honey Butter & Chili Butter


Saturday I hosted a Chili Cook Off fundraiser for CF.  We had right at 20 guests.  It was so much fun. If you want to read about it you can do that by clicking here.  There were 9 Crock-pots of chili, chili fixins, hot dogs, and cornbread.  The cornbread leads us to the topic of this post.  Butter!  Since,  I was doin' it up Chili style for CF, regular ole' butter just wouldn't do.  I searched the net for recipes, but in the end I made up my own concoction.  I enjoyed both and it seemed the guests did too.

Ingredients -

1 sticks (1/4 lb) butter, softened to room temperature
1 oz  honey

Directions -
  1. Plop butter into a bowl. 
  2. Pour in the honey.
  3. Stir until well blended. 
 

Calories - 886 per batch
                 111 per tablespoon


Chili Butter

Ingredients -

1 stick (1/4 lb) butter, softened to room temperature
2 tsp chili powder
1/4 tsp ground cayenne pepper

Directions -
  1. Plop butter into a bowl.
  2. Sprinkle in the seasonings.
  3. Stir until well blended.
Calories - 800 per batch
                 100 per tablespoon
                
That's it! The hardest part is waiting for the butter to soften.

Meyer Ladies' Pimento Cheese

So, there is this thing, I like to call it "tradition", that we do whenever the Meyer ladies are together.  We sit at the kitchen table, chat, and snack on this pimento cheese and Triscuits....there is always the "Meyer Family Chicken Salad" too!  I wonder if the Meyer men's ears ever burn?  Hmm.

Meyer Ladies' Pimento Cheese

Ingredients -

2 c finely shredded cheddar cheese (I use mild cheddar)
1 c mayo
1 T diced pimentos plus add a little juice
black pepper to taste



Directions -
  1. Dump all ingredients into a medium bowl and stir until mixed well.
  2. I like to let it set in the frig. overnight....the flavor is better that way. 
  3. It's great served on crackers or as a sandwich. 

This recipe makes 2 c pimento cheese spread.
That will cover 32 crackers if you use 1 tablespoon pimento cheese spread.
